Hello, sweet child of mine, come on in and let’s make Ravioli with cheese. I’m going to show you how Grandma does it. Before we start wash your hands, put an apron and let’s get ready to rumble! It is Grandma home so you should know before we start there is going to be a plenty of Ravioli at the end, nobody is going home hungry.
First we need to make Ravioli dough. Place flour mixture on a board (1kg.), making a well in the center of the flour. Beat the eggs (2 eggs) slightly and drop it into the flour well. Combine the eggs and flour together, adding enough water to make dough. Water should be lukewarm (not too cold and not too warm).Knead dough well, until it gets smooth. Cover the dough, so that cannot run away and start grinding cheese. Work work work…
How much cheese you should get depends on how much Ravioli would you like to get. 🙂 What kind of cheese, it is all about your taste. This is up to you, you are filling it. Grandma used 2 types of cheese, aprox. 1 kg. After you have done grinding all the cheese, you need to add pepper ( on your own wish), 1 spoon sugar, 1 spoon homemade schnapps, at the end beat 6 eggs slightly, drop in and mix everything. Filling the ravioli, you need to cut the dough (length – size of working table, width – aprox 10 – 15cm,keep in mind that you need to flip dough sheet, check the photos.) and roll dough into a very thin sheet. After you have done it, it is time for filling , in this case cheese. Use ¼ spoon and keep one finger space between each other. Cheese should be place at the end of dough sheet so that you can cover filling with other part of dough. Using your fingers gently press dough between each dab of filling to seal it. Cut ravioli as you like, it is important that dough sheet is connected. After that, place them one by one on big plate and put Ravioli in freezer. Dobar tek! 🙂
